In our laboratory the beer, even keeping its historical roots, blends with typical products of Sicily that recall the riches of our land, giving life to a new product we believe in.
We don’t use any pasteurization nor filtration nor preservatives and chemical stabilizers.
We use only natural ingredients and each beer is refermented in the bottle following an ancient German technique.

The origin of the term is presumed to be Aragonese and recalls the Spanish domination of the Island
The beer “Criata” is a wheat beer enriched with the addition of local honey. Wheat is the only grain, besides barley, that was allowed in beer production by the “Reinheitsgebot of 1516,” the German beer purity law that permitted only barley malt, water, and hops as ingredients, as the Bavarian region was renowned for its wheat beers.
The specific yeast strain is extremely distinctive, making the brewing of this type of beer quite challenging. Depending on the fermentation conditions, it imparts an opalescent color and the characteristic notes of clove and banana. The mixture of barley malt and malted wheat in almost equal measure, along with two types of hops with a very subtle aromatic profile, gives a golden color, a very thick and persistent foam head, and a sweet and sometimes slightly sour taste that is extremely refreshing.

The "Raisia" exercises the art of command during tuna fishing. It is to him that the Tonnaroti relied during the slaughter, and it is he who, finally, by removing his cap, decides when the fishing is concluded. The term of clear Arabic origin recalls the Saracen domination in Sicily dating back more than a thousand years ago.
The beer “RAIS” is inspired by the Belgian brewing tradition to which we have added a secret ingredient that we produce within our laboratory.
This, combined with the blend of seven types of barley malts and the use of three varieties of hops, one bittering and two aromatic, characterizes the complex and refined character of the beer, which recalls the importance and complexity of the role of the Ràis.
The yeast strain ensures the presence of hints of blueberry, strawberry, and other red berries, with green apple present, while the malt blend predominates over the hopping, also allowing notes of toasted and caramelized to be perceived.
The color is amber with bright red reflections while the foam is thin and moderately persistent.

The beer “SCIUSCIA’” is inspired by the American brewing culture that favors bitter but fragrant beers that are easy to drink and have a low alcohol content.
We added, to a slightly biscuity malt base, two types of continental bittering hops and two types of aromatic American hops, using the DryHopping technique.
We used a neutral yeast to bring out, on the nose, the hoppy notes of herbs, citrus, and tropical fruit, and on the palate, the pleasant bitter perception.
The color is deep yellow with a slight haze while the foam is medium but persistent.
The shoeshiner was a boy who, to support the family economy, positioned himself with his work tools, a chair, and a stool, in the square or on the main street of the town, and for 6 coins cleaned the customers' shoes.
Once upon a time, the square was crowded with people who "strolled," from the upper bourgeoisie to the nobility, politics, and even the common folk, and everyone dedicated a few minutes to polishing their shoes. But it was with the end of the Second World War that even the American soldiers stationed on the island wanted to have their shoes shiny (shoes shining), from which the Italianized term Sciuscià was born.
